

Refrigerated lemon and lime cake.
I am not vegetarian. I do have beef gelatine powder but not vegetarian. Also I have leaves.
Can I use either if so is the the same for the powder and how many leaves?

You can use beef gelatine powder.
You need the amount required to set a pint of liquid which is probably 1 sachet.
However, I would change the method slightly….
Sprinkle the gelatine powder into a cup containing the lemon juice. Stir, and when the gelatine has soaked up the liquid, place the cup in a pan of barely simmering water and leave until the gelatine has dissolved completely and turned transparent.
Meanwhile put the egg yolks, grated zests and lime juice into a medium heatproof bowl and add the caster sugar. Then place the bowl over a pan of barely simmering water and whisk using an electric hand whisk for about 5 minutes, then pour in the dissolved gelatine and continue to whisk for a further 5 minutes or until the mixture thickens.
Then remove the bowl from the heat and whisk again for a further 7-8 minutes until the mixture cools and continue as per the recipe.
