

Hi Lindsey - I made the twice baked cheese soufflés .
On the second baking the soufflés rose really well but then collapsed quite badly as soon as I took out of oven and were even flatter than when I baked the first time . Not sure what happened.

Usually they do not rise as much on the second baking. They rise a little but at the same time they spread so the height is limited.
You do need to be quick but very gentile with them to preserve the rise that’s achieved.
I hope they still tasted lovely.
