I absolutely swear by Delia's Christmas "bibles" as I call my 2 books, but what are the general guidelines per Lb/Kg for a Turkey? As I can't see it in the books... I was always taught 20 minutes per pound - using the first and last half an hour for initial heat/final browning. Would this be about right?

Delia’s recipe does work out as 20 minutes per pound overall so yes that is about right.

Marvellous! Thanks for that. Also, I've always wondered what is meant by "Oven ready weight" in the book? Is that the weight of the raw turkey, or its entire weight when stuffed just before going into the oven? I'm guessing it is the former, aimed at those who have to defrost their turkeys...

Yes it means a bird that is sold ready to be roasted. i.e. without the stuffing.
