

I am making a birthday cake which I need to take by train from London to Birmingham and would like your advice on easiest cake to transport. My first choice is coffee and walnut but am concerned about the icing so am thinking fruit cake would be wisest. I have a good container to carry it in but door to door the journey will take 3 hours.

A rich or light fruit cake will travel well, but if Coffee Walnut Cake is your first choice you could do that, but instead of the mascarpone filling you could use the same icing as the Iced English Walnut Cake which doesn’t need to be kept chilled. You could even make a coffee version of the icing with 1 egg white and replace the second with 1 – 2 tablespoons of coffee essence (or espresso powder dissolved in a little boiling water).
