

Hello Lindsey
I've been fortunate enough to have been given a leg of venison (is that the same as a haunch?) It weighs 1.75 kgs and it's been hanging in a cold cellar for a week. Because entertaining on a big scale is, sadly, off the radar at present and there are only two of us, I wondered whether you could advise me on what to do with it. Should I just freeze it and wait for better times so that I can roadt it or would you suggest taking it off the bone, portioning it up and cooking it some other way?Hope you can help.

I would take it off the bone and make a stew and perhaps a pie.
