

Stollen
Hi
I am in the process of making the Stollen and followed the recipe from Happy Christmas. It gives the quantity of milk has 150ml to the 300g of strong flour. I had a very wet mixture and needed to add quite a lot more flour to eventually form a dough.
I came to look at the Cookery School to see if I did anything wrong and noted that in that, Delia says it is 110ml of milk
Is the book incorrect as this would explain why the dough i had was too wet
It is proving now so hoping i managed to rescue it

Hello Rob,
The version in Happy Christmas and the original Christmas Book are both 350g flour are to 150m milk but the recipe requires much more kneading and as you knead the dough becomes less sticky.
The cookery school version has 2 tablespoons less milk but it is not kneaded in the same way.
I hope that explains the difference.
