The sherry in gluten free Christmas pudding

Hi, I'm making a gluten free Christmas Pudding using Delia's recipe. It says to use sherry instead of stout and barley wine if making it gluten free. What type of sherry should i use? I don't know much about sherry apart from that it comes in dry and sweet varieties.
I’d choose a dry sherry as there are a lot of sweet ingredients in the pudding.
