The recipe for almond icing (marzipan) starts with heating the sugars and egg in a bowl over simmering water, does this ensure the egg is cooked and therefore safely able to be in the recipe?

We have not experienced any issues with Delia’s recipe for marzipan.
The egg is cooked in the recipe but we do not know if it is cooked sufficiently to make it completely worry free for venerable groups.
I my opinion Delia’s recipe is safe but if you have any concerns you could buy a good quality natural marzipan instead.
The NHS have a page on their website which says….
Because of improved food safety controls in recent years, infants, children, pregnant women and elderly people can now safely eat raw or lightly cooked hen eggs, or foods containing them, that are produced under the British Lion Code of Practice.
