The recipe says 85% but I’m sure 70% or above is absolutely fine.

Please, accept my apology for the misunderstanding.
The recipe of the pudding itself clearly says: "110g dark cooking chocolate (85%)".
The recipe of the "chocolate sauce" is in need to be revised to specify clearly the percentage of cocoa solids: "225g dark cooking chocolate (55...".
Is it correct that dark chocolate (at least 55 per cent cocoa solids) should be used?

Again I would use 70% or above.
