

Hi Lindsey. Hope you enjoyed your recent holiday and lovely to have you back! My question concerns Delia's Pork in Cider and Cider Vinegar Sauce. For health reasons my husband has been advised to avoid all red meat (which includes pork). One of his all times favourites is Pork in Cider - would this work with chicken and are there any other meat recipes that you are aware of which could be happily substituted with chicken? Unfortunately the holiday plans we’re suddenly altered for family reasons so we’re now looking forward to the next one.
I think there are many recipes that have been developed for pork that can be adapted to use chicken.
For recipes that take longer to cook I would consider using whole thighs or legs and for recipes that use tenderloin I would probably use the breast.

Spiced Pork Kebabs
Pork Stroganoff
Marinated Pork with Coriander
Roast Tenderloin of Pork
