

Dear Lindsey, I want to make the Christmas pudding and only have a plastic 1litre bowl(its steamable). will it taste the same or is it better to get a ceramic bowl, or pyrex glass? also I don't have a steamer that's large enough-can I put it in a saucepan of water? is the timing the same?

You can use a plastic basin. Cover it with the buttered paper and foil. Make sure you do a good-sized pleat in them so there is plenty of room for the pudding to expand as it cooks. If you don’t do that the covers may burst or you can end up with a misshaped pudding.
You can steam it in saucepan with a tight fitting lid. You need to put an old saucer, dish or some kind of water resistant trivet in the pan first then the water needs to go halfway up the side of the basin. Get the water to a simmer before you put the pudding in and then the water needs to be simmering constantly for 8 hours. Top up regularly with boiling water.
If you plan to make a pudding every year it’s worth getting a universal steamer. They make life much easier and are great for other recipes like sponge pudding and steak and kidney.
