Steaming the potatoes in Anya Potato Salad

Hi Lindsay, in Delia's recipe for Anya Potato Salad the recipe says steam the potatoes over salted boiling water. Why salted water please?

We find they taste nicer, but there is salt in the dressing so can omit it in the water if you prefer or even leave it out (or reduce it down) of the dressing if you’re looking to reduce the salt overall.
