I’m making Delias Christmas pudding and will steam tomorrow, can I steam for 9 hours instead of 8 so that on Christmas Day I only need to steam for one and a half hours?

Hello,
No I’m afraid it doesn’t work that way. It is 8 hours when you make it and then it needs the 2 ¼ hours steaming on the day to heat and lighten the pudding. Or you could make two smaller puddings, which will only need an hour on the day.
If it’s because you don’t have the free space for that length of time on the day, I think (but haven’t tried) that you could steam it for 1 ¼ hours on the day and then move it to one side whilst you deal with the other cooking and then put it back on the heat to steam for the remaining time before you serve it.

I hope that helps.
