

I have been asked to bake a cake for a golden wedding but they want a sponge cake. As a sponge cake will be quite soft and I need it larger than a normal one, can I bake it in a deep square 20cm. cake tin or larger...if so what quantity of ingredients would I need? I am a novice and very nervous about this!

The problem with sponge cakes that are cooked in deep tins is that they tend to dry out at the edges before the centre is cooked.
I think they are best cooked in layers even if that means making and baking one layer at a time.
I can help with quantities but you really need to decide on what size you want the cake to be.
