I want to make as a starter for New Years eve, is this realistic and could I just serve it with a bit of rocket for colour and decoration?.

Yes, I think you could do that. Presumably you’ll reduce the portion size.
I’d probably still use wilted baby spinach leaves because I’m not keen on stalky rocket.
