

Big fan of Delia esp Creole Christmas cake. I like to make them for gifts at Christmas time. Please can you let me know quantity and cooking time if I wanted to make them in a 5 or 6 inch tin instead of 8 inch. That way I can give more away and keep cost down, Thank you. Margaux

The 8 inch Creole Cake is a 5 egg recipe so the amounts for those specific size tins is not straightforward.
I know the basic 5 egg recipe works in 2 x 6 inch tins.
And I expect (but haven’t tested) the basic recipe will make 3 x 5 inch tins.
Timing is tricky. Probably check at 50 minutes for a 5 inch and 1 hour for the 6 inch and in both cases if they are not cooked in that time check them every 15 minutes after that.
Rich fruit cakes are better if they are baked tor longer and obviously the smaller the cakes, the less time they will take to bake.
When I need small ‘gift’ cakes I always make the 5 egg recipe in a 20cm square creole which takes about 4 hours to bake. Then when it’s completely cold it can be cut into four, 4 inch square cakes and individually decorated.
