

Hi Lindsey,
I have just inherited 3 hexagonal cake tins (14 inches, 10 inches and 8 inches). I always use Delia's Classic Christmas Cake recipe. How do I scale this up for tins of this size and shape? Most conversion charts I've found don't go up this size for this tin.

I suggest, but have not tested all of these ….
A 5 egg quantity for your 8 inch hexagonal tin.
A 8 egg quantity for your 10 inch hexagonal tin.
A 16 egg quantity for your 14 inch hexagonal tin.
For larger cakes I always give them some extra layers of protection around the outside and make sure the top is covered with a double layer of parchment (not touching the cake mix).
I would check the cake 14 inch cake at 5 ½ hours then every 15 – 30 minutes after that depending on how it’s looking.
