

I am keen to make some of Delia's cheesecake recipes. However quite a few call for curd cheese. It may have been fine when the recipes were written but seems to be very difficult to get now. What would make a good substitute? I'm wondering about quark, cottage cheese, ricotta cheese etc.

Because of the smooth creamy texture of curd cheese, I would use full-fat cream cheese if you can’t find curd cheese.
