Hello,
We don’t use jam sugar or pectin, just lemon juice. The recipe uses preserving sugar but it will work with granulated. Preserving sugar does not contain pectin, but the crystals are slightly easier to see if they have completely dissolved.
If you prefer to use pectin there will be instructions on the packet.
