

1. Austrian Coffee & Walnut cake (as for most cake recipes) ask for large eggs, which I often, as now, don’t have/can’t get. Could I use 4 smallish eggs, or 3 and a half?
2. Nor do I have fromage frais, or yoghurt or Creme fraiche? Could I increase Mascarpone, or use double cream with lemon? Or just wait for next online delivery slot

We use all mascarpone in Delia’s Coffee and Walnut Cake (see below) and it’s lovely so yes, I would do that if you can’t get fromage frais.
