Freezing Roasted Tomatoes

Hello Lindsey,
One in my family has had to go on a very restricted diet for a few months and I have found that he really likes your roasted fresh tomatoes. Is there a way I can freeze them, ready or partially cooked, so that I can cut down on time-to-serve? Many thanks

They will be softer after freezing but that could be heated in the oven for a short while to liven them up a bit.
I would freeze the cooked tomatoes, spread out flat on a lined tray until solid before packing them into freezer bags or boxes for up to six months.
Defrost overnight on a covered plate in the fridge or on the day, out of the fridge for an hour or so.
