I have now made Delia's Dundee Cake three times, each time it has over risen in the middle and broken up so I don't get a regular pattern of almonds. I have downloaded the 'Traditional Dundee Cake' recipe from Delia's Cakes and this third time have slightly reduced the quantity of baking powder, to no avail.
Can you suggest anything?
A must-have in any kitchen is a good set of bakeware, and what better than Delia's own range, made in the UK to her own specification. This month, we have a full set to giveaway with our exclusive competition in association with Grana Padano.

Hello,
Ours rises quite high too and sometimes cracks a little and falls back a bit as it cools. I presume you are using plain flour with the baking powder. Could your oven be hotter or are your using a fan setting?
Best wishes
