I am writing to ask about the recipe for Apricot Oat Slices. I have made them twice and, although I added more butter, they do not stick together. We end up eating the cooked 'biscuits' with spoons!! Delightful but we would rather have them in a solid form!

Hello Anna,
These can be a bit crumbly. For them to hold together you need to be press the mixture down very firmly.
The chopped apricots need to be the soft eating variety so that they feel a bit squidgy when they are chopped.
Lastly, when the weather is warm it helps to leave them longer before you cut them so the butter has time to set and helps hold them together.

I wondered if you might have suggested Golden Syrup? Anyway, I will give it another go. Maybe difficult though to buy fresh apricots now. Should have thought about freezing some!

We use the dried – but ready to eat apricots that are soft.
Increasing the sugar will probably ‘set’ the mixture but we haven’t tried it.
