when i make anything with pastry,why does my pastry always shrink??
Assuming you are carefully following the recipe and leaving your pastry to rest it is probably shrinking because you are stretching it when you roll it out. Make sure the pastry isn’t too cold. If it’s been in the fridge too long and has hardened, leave it out of the fridge for a while so it’s more pliable. Take your time when you roll it out and don’t press down on the rolling pin too hard. Only roll forwards and backwards but never sideways. Turn the pastry so that you can keep an even pressure on the rolling pin.
I’m not sure if you’ve watched the cookery school lessons that include pastry rolling but they may help.
