Some questions about the Lasagne al Forno

Hello - The recipe for lasagne al forno says it can be frozen. Is this done when the whole dish is assembled, and how should it then be cooked in a fan oven? Should it be defrosted first? Should the cooking time be increased? Also - what is sauce flour and where would I get it? I’ve only ever used plain flour in sauces.

You can freeze the ragu sauce or you can freeze the whole lasagne ready to cook.
When using prepared lasagne from the freezer I prefer to defrost it in the fridge overnight then check if it has defrosted in the morning. If it hasn’t, I remove it from the fridge for a few hours to let it finish defrosting before cooking.
However, you can cook a lasagne from frozen, in which case it will take about 20 minutes longer. If you do this, I suggest covering it with greased foil for the first 30 minutes so that it doesn’t over brown.
Sauce flour is a plain white flour that has been developed to blend into liquid without forming lumps, even without using fat. It is available in most UK supermarkets. However, you can still use plain flour in an all in one white sauce instead.
