In Delia's Christmas book, her turkey recipe says to leave the turkey out of the fridge overnight to warm up to room temperature. Current food hygiene and safety advice says that raw poultry should not be left out for more than 2 hours before cooking it. Has Delia updated her recipe? How should I cook my turkey according to Delia's recipe (which is lovely) without putting my family at risk?
