

The question is in regard to Delia's recipe, Caribbean Banana and Raisin Strudel.
After assembling, can it be frozen until you want to cook it, say, for two weeks? I am thinking that the bananas would be affected and go black.
If you cook it immediately, again I wonder about the bananas if you freeze it.

Hello David,
This recipe is not suitable for freezing.
It is very quick to make, but if you really wanted to get a ahead a few steps you could prepare the layers filo pastry and nuts on a tray lined with baking parchment, wrap it really well and freeze it.
You could even soak the raisins with the orange juice, dark rum and zest until they have plumped up and then freeze them.
Then on the day all you have to do is defrost the pastry and raisins, melt some butter, peel the bananas, strain the raisins assemble and bake.
Whisk the juices into the crème fraiche and serve.
