

I have just made and baked Delia's fantastic salmon coulibiac. It's a big favourite of mine. But I want to freeze it to eat on Christmas Eve and would like your advice please on freezing and then re-heating. I suspect I should have frozen it un-cooked, but it's done now! Many thanks. Jennie

You’re right, it is prepared and frozen uncooked and then cooked from frozen. As you have cooked it I think it would be better to defrost it in the fridge overnight then remove it from the fridge an hour or so and let the temperature come up. Then you need to be careful not to heat it for too long or you will dry it out. I haven’t tested this but I would be tempted to brush it with melted butter first and then bake it for 15 minutes at 180C, then check with a probe or a skewer to see if it's heated through.
Alternatively, defrost overnight in the fridge then remove it from the fridge ahead of time to take the chill off and serve cold with plenty of hot lemon butter or foaming hollandaise.
