I’ve been working my way through Delia’s Summer Collection this year and had some real triumphs! I have just made Caramel Meringues and served them with mascarpone cream and a compote of summer fruits.
It was all delicious but the meringues were stored overnight in an airtight container. They looked great but were extremely soft and sticky to eat. I followed Delia’s instructions to the letter! Do you have any ideas where I may have gone wrong? Many thanks Steve

Dear Lindsey,
Thanks for getting back to me. Yes it was quite a warm and humid day when I made them but I left the meringues in the oven until it was completely cool - about 4 hours. Then they were stored for about 12 hours in a metal tin in a cool place under the stairs.
