Crumbly Christmas Cake
Asked on 20 Sep 2017 by Neep
For years with the exception of two years ago I follow Delia's recipe when making my Christmas cake but every year I get the same result! The cake tastes great but crumbles when I cut it ! I always soak the fruit, I do everything the recipe tells me to do! Two years ago I tried an alternative recipe but had the same result! It's time to think of this year's cake.....I would so like it not to be crumbly!!!! Please help!
Hello,
It may be that the eggs are too small. We use large eggs and always pick out the largest ones in the box.
Another reason can be under baking.
But I think the most common reason is that Christmas cakes are displayed in warm dining rooms before serving but they are much easier to slice if they have been kept in a cool larder or somewhere similar.
I hope that helps.
Kind regards
Lindsey
