Another couple of questions - Delia's Apple recipes often call for Bramley Cooking apples, I live in Spain and unfortunately I cannot get cooking apples, what are the best apples, eaters, to use instead. I also cannot get double cream, only a long life cream that just about whips if really cold. Will this be ok for the vanilla creme brule recipe?

Hello Roz,
I think that cream will work for crème brulee.
Perhaps Reineta apples if you can find them.
