I hope this message finds you and the team well!
I have a question about roasting ham. I have a wonderful butcher, called "Proper British Bacon," and I always buy my Christmas ham from them. I have bought a 1/2 leg of gammon, bone in and skin on, that has been cured but not smoked. It is uncooked. They tell me it will weigh anywhere from 10-13 pounds.
I follow the Traditional Baked and Glazed Whole Ham recipe from the original Christmas book. My question is in the semantics. Delia says that a whole ham should weigh between 12-14 pounds and that a half (I am guessing boned and rolled) should weigh 5-6 pounds. Even though mine says it is a half a leg, am I still alright to roast it for the specified 20 minutes per pound? Or would you do a little less?
Thank you for taking the time to answer our questions. Again, your service on this site is vital, and especially when we are all in the crush of the run-up! I hope you and your family enjoy a wonderful, peaceful, and restful holiday!
