I want to make the Roast Gammon with blackened crackling but my joint of gammon weighs 3kg (no bone). How much longer would I need it to cook it for or would the crackling burn if it is cooked for longer? Thank you, Janet.

It’s probably going to need the 25 minutes plus 3 hours. I don’t think the longer cooking will spoil the crackling.
