I have made Delia's mincemeat. Tastes lovely - but has a coating of white fat over everything making it not look too nice in the jar. Have I made it wrong?

It’s unlikely that you have done anything wrong.
The white is just the suet that has solidified.
When you come to use it just give it a good stir.
