

I made a gluten free Christmas cake a month ago a and have been feeding it weekly.
However, i have come to ice it and discovered it is very wet so I cut it in half and found it not cooked through the middle.
How can I rescue it? Is it safe to put back in the low oven to re cook it?

It’s not unsafe to do that but I don’t think it will work. Alternatively, you could trim away the burnt edges and serve it as a hot pudding with brandy cream – a bit like spiced bread pudding.
