Making a large batch of marmalade with ordinary oranges!
I have a question about the Traditional Marmalade recipe.
I made it last year (we wanted to make 24 jars but ended up with 35 pots for a school fundraiser) and we would like to do the same again this year but in a larger quantity (100 jars).
However, we found that there was too much water as we multiplied the recipe by 4 to get 24 jars. Do you think that we should reduce the amount of water - is it proportional to the amount of oranges used? Also, we didn't used seville oranges because we weren't able to get any where we live. So perhaps there was more juice in the regular oranges than in the seville oranges?
