

Hi, I have made Delia’s sweet mincemeat and although it tastes delicious it is much lighter in colour than the batch I made last year. On both occasions I grated the apple but this time there appeared more volume. It has an almost curdled appearance. Any ideas please?

Hello Chris,
We do not grate the apple, we chop it. Did you use dark brown sugar? Have you cooked it? If you have cooked it, did you stir it after it cooled? If there is a larger volume than you had last year could you have inadvertently put more apple (or something else?) in than stated in the ingredients?

Hello again Lyndsey, Thankyou for your quick reply. I am going to make some more and will chop the apples this time,I grated them because I’m not a very good chopper but I will give it a good try. It seemed to be a larger volume of apple but the weight was correct. I have cooked it and I did stir it well when cold. What I have only this moment realised is I used light sugar so my apologies,that will have made the difference. Why I did that I have no idea,silly me. I will be starting the next batch tomorrow with dark sugar and will let you know the result. Once again Thankyou.
