This morning I made the truffle torte......all going well till I added the last of the cream it then went very thick and mousse like. Had to spoon it into the tin rather than pour. Can you please advise what you think might have gone wrong. Have made it in the past with no problems. It is now chilling but not sure it will be edible

It may be that the melted chocolate was too hot or that they cream was too cold.
