I am making pear and ginger chutney, I cannot get it to go syrupy despite simmering for ages now. The pears are very soft. Any tips? Will it set as it cools?

I’m not familiar with the recipe you are following so I don’t know if it’s likely to set. It could be that you have simmered it more gently than the author intended.

Thankyou Lindsey. I realised after writing I had been simmering with the lid on, and of course jam etc is usually made without a lid. Thankyou for replying.
