

Dear Lindsey, I have made the delicious traditional orange
marmalade with preserving sugar, when I see the recipes
for the dark chunky marmalade and the suntina marmalade
I have to use granulated sugar, can you tell me why Delia
isn't using the same sugar in these recipes?

Dear Nico,
Delia used preserving sugar when the recipe for marmalade was recently revised for the cookery school. You can use preserving sugar for any of Delia’s preserves that used granulated sugar.
