I note that your pots and pans are a silver colour. I have read somewhere that they should be dark for better results. I could be wrong, so your opinion and why would be helpful.

The silver ones are either aluminum or stainless steel.
We have the little gem frying pan and saucepan that we use regularly. They have a very long life but they need to be washed by hand.
Delia has a set if try-ply stainless steel pans which have lasted really well but the brand that she has are no longer available.
The dark pans you mention may be aluminum with a titanium (or other) coating. We have some of these but they haven’t all survived and what we have left have started to peel so we haven’t got a brand that we can recommend.
At home I’m using GreenPan which are aluminum with a ceramic coating and I’m very happy with, but I haven’t had them long enough to know if they will stand the test of lime, but so far they are performing well and look as good as the day I bought them.
