For how many people is the Classic Sponge Cake recipe?
It depends on when your serving it, and to who, but generally I’d say a 2 egg classic sponge will serve 6 and a 3 egg recipe 8 – 9.
Thank you for your reply. I have another query regarding the Classic Sponge Cake recipe. I followed the 2-egg recipe quantities, butmy cakes did not rise as per your video. They rose to about 2cms each. They had a light sponge consistency, but your video shows cakes which seem more risen (maybe 3/4cms each). Could you tell me what cake height I should expect based on the 2-egg recipe (with 115g of flour/butter/sugar)? Thanks a lot.
Our sponges are about 2cm high too.
You can see this in the video at about 5 minutes. You can see that the cooked sponge is about halfway up the tin, which is about 4cm deep.
The filled cake in the video is exactly that same as the one in this picture. We prefer it that the sponges are not too high so that when they are filled the proportion of sponge to jam is correct.
