Pickling for Christmas
I have both of Delia's Christmas books. I still mostly use the older version, it has many written notes against the recipes, and much loved splashes too. However, I set 1.35kg of shallots to soak yesterday evening, and discovered a difference in the amount and combination of the vinegars required. I've used the older recipe since the book was released, but is there any reason these quantities are different in the newer version?
In the original version 110ml sherry vinegar and 275ml white wine vinegar, total 385ml. newer version indicates 175ml sherry and 425ml white wine, total 600ml. Obviously, I will be tripling these for the quantity of shallots that are currently soaking.
