Hi, I just made the crumpets: they were great, but when flipped the bubbles smear and the crumpets don’t have holes in the top. Any tips? I tried popping the bubbles with a sharp knife before turning as most didn’t pop and had a better result, but that’s quite time consuming. I didn’t get loads of bubbles anyway. They were still light and fluffy inside, it’s just I’d like to get that butter filled holes ooze that I miss now I live in France! I’ve seen other recipes elsewhere that use bicarbonate of soda and they are more bubbly but taste a bit chemically.
