One last question about Tarte Tatin !
The apples were a little dark and there was a
very slight bitter taste! Is that because I overcaramelized the apples ?

Yes. Very easily done, it can happen in a moment. I pull the pan of the heat, check the centre apple and put it back if the colour is too pale.
