What is the best way to prepare butternut squash as I find it very difficult to peel etc

Hello Rose,
I use a Y peeler. I lay the squash on a board, hold the squash firmly with one hand and use the peeler to slice of the rind, turning the squash gradually. I usually do the narrow half first then turn the squash and do the bulbus half. But you could do the whole length in one go if you like.
My peeler is a ‘OXO Good Grips’ Y peeler and I find it’s brilliant for squash, pumpkins, celeriac and swede.
