

Hi Lindsay,
I baked the Delia fruit cake with almond topping... it says to bake for 4 hours on 140 .... I soaked the fruit and did everything I was asked to do... it stated not to look at it for 4 hours I even covered lightly with extra backing paper as stated... and it has come out nearly black and as dry as a biscuit, can you please explain why?

Yes it didn’t say another type of setting for a different temperature?
All of Delia’s recipes with an eclectic oven temperature have been tested in a conventional oven, using top and bottom heat.
If you have a fan oven, we advise that you should reduce the given temperature by 20 degrees.
However, as the classic Christmas cake is baked on a lower shelf, if you’re using a fan oven I would reduce it to 115 degrees, but you can use any shelf.
