Classical Christmas cake - it states cooking temp of GM1 or 140 can you please advise on temp in respect of fan assisted ovens please. Many thanks.

All of Delia’s recipes that require and oven are tested using conventional top and bottom heat, so if you are using a fan oven, you need to reduce the oven temperature by 20 degrees.

Thank you for your reply - I have used the recipe for the passed three years making four or five cakes each Christmas as "gifts" always had great compliments and the cake held back for Christmas day has also been great - I have cooked these NOT making an allowance for a fan over however they do need to be removed from the over bang on the 4 hours. My first bake for 2016 in going in tomorrow - I will now reduce the temp by 20 and see what happens - watch this space.

If you have had perfect results every time, using your fan oven, baking them for 4 hours at 140 I would suggest you do the same again.
