

Hello Lindsey Delia's recipe of the day (Tomato Soup) - I'm just being curious here. Why does Delia not recommend skinning and chopping the tomatoes prior to cooking in this particular version of tomato soup?
I plan to make it tomorrow but will probably follow my instincts and skin etc (unless you say otherwise)

Hello Eileen,
We frequently leave the skins on tomatoes nowadays, and in this particular recipe they add colour and flavour and then any bits left after liquidised are sieved out.
