I made the cake yesterday, are you saying it won't last until Cristmas Day?
No I’m not. It will be fine. A traditional Christmas cake is packed with vine fruits, which mature and keeps moist for months. Your Light Christmas cake will be fine for Christmas. Keep it well wrapped. I like to use a pastry brush to brush mine with brandy before I decorate it, usually about a week before Christmas.
If you had said you made it weeks ago I would have suggested feeding it to moisten it, but as you have only just made it I think it will be fine.
